Description

These are hands-down my most requested cookies! I bake at least 400 every Christmas, and they’re gone in no time. Easy to make, packed with flavor, and always a crowd-pleaser. Loaded with toasted almonds, sweet coconut flakes, and rich chocolate chunks, every bite delivers the ultimate holiday treat.

Anti-Inflammatory Highlights

Almonds: Rich in monounsaturated fats, vitamin E, and magnesium, which help combat oxidative stress and support heart health.

Dark Chocolate: Provides powerful plant-based flavonoids and antioxidants that promote overall cellular wellness and cardiovascular support.

Ingredients

 1 cup unsalted butter, softened

 3/4 cup granulated sugar

 3/4 cup brown sugar, packed

 2 large eggs

 2 tsp pure vanilla extract

 2 1/4 cups all-purpose flour

 1 tsp baking soda

 1/2 tsp salt

1 cup sliced or chopped almonds, toasted

1 cup sweetened shredded coconut flakes

1 1/2 cups dark chocolate chips or chunks

Instructions

1. Prep the Oven & Pans: Preheat your oven to 350°F (175°C) and line large baking sheets with parchment paper.

2. Cream Butter & Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed until smooth and creamy.

3. Add Wet Ingredients: Beat in the eggs one at a time, then stir in the vanilla extract until fully incorporated.

4. Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the butter mixture, stirring just until combined.

5. Fold in Mix-Ins: Gently fold in the toasted almonds, shredded coconut flakes, and dark chocolate chips until evenly distributed throughout the dough.

6. Scoop & Bake: Drop rounded tablespoon-sized balls of dough onto the prepared baking sheets, leaving space between them. Bake for 10 to 12 minutes, or until the edges are golden brown and the centers are just set.

7. Cool & Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your holiday favorite!
