Anti-Inflammatory Highlights

Cherry Tomatoes: Loaded with lycopene, vitamin C, and beta-carotene, powerful antioxidants that help combat cellular oxidative stress.

Fresh Herbs (Parsley & Basil): Deliver essential flavonoids and micronutrients that support immune and cardiovascular health.

Extra Virgin Olive Oil: Provides heart-healthy monounsaturated fats and natural anti-inflammatory compounds.

Ingredients

 12 oz penne pasta

 2 chicken breasts

 2 cups cherry tomatoes, halved

 ¼ red onion, diced

 2 tbsp olive oil

 1 tsp Italian seasoning

 Fresh parsley or basil, chopped

Parmesan, salt & pepper to taste

Instructions

1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain, reserving 1/4 cup of pasta water, and set aside.

2. Season & Grill Chicken: Season the chicken breasts with Italian seasoning, salt, and black pepper. Heat 1 tablespoon of olive oil in a skillet or grill pan over medium-high heat. Grill or pan-sear the chicken for 6–7 minutes per side until fully cooked (internal temp reaches 165°F / 74°C). Let rest for 5 minutes before slicing into strips.

3. Sauté Tomatoes & Onion: In the same skillet, add the remaining 1 tablespoon of olive oil. Toss in the diced red onion and halved cherry tomatoes. Sauté for 3–4 minutes until the tomatoes soften and release their juices.

4. Combine: Add the cooked penne pasta and sliced grilled chicken directly into the skillet with the tomatoes and onions. Toss well, adding a splash of the reserved pasta water if needed to create a light, glossy sauce.

5. Garnish & Serve: Remove from heat, garnish generously with freshly chopped parsley or basil, grated parmesan, and extra salt and pepper to taste. Serve warm and enjoy!
