Anti-Inflammatory Highlights

Fresh Apples: Loaded with quercetin and dietary pectin to support digestive health and combat cellular oxidative stress.

Ground Cinnamon: Packed with potent polyphenols that help regulate blood sugar spikes and provide natural anti-inflammatory benefits.

Ingredients

2 medium fresh apples (like Honeycrisp or Gala), peeled, cored, and finely diced

 2 cups all-purpose flour (or gluten-free 1:1 baking flour)

1/2 cup granulated sugar or zero-calorie sweetener

 2 tsp baking powder

 1 tsp ground cinnamon

 1/4 tsp ground nutmeg

 1/2 tsp salt

 1 large egg

3/4 cup milk (unsweetened almond or skim)

1/4 cup melted unsalted butter or coconut oil

 1 tsp pure vanilla extract

 Powdered sugar for dusting (optional)

Instructions

1. Preheat & Prep: Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or spray generously with non-stick cooking spray.

2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar (or sweetener), baking powder, ground cinnamon, nutmeg, and salt.

3. Whisk Wet Ingredients: In a separate medium bowl, whisk together the egg, milk, melted butter (or coconut oil), and vanilla extract until smooth.

4. Combine Batter: Pour the wet ingredients into the dry mixture and stir gently with a spatula just until combined (do not overmix). Gently fold in the 2 finely diced apples.

5. Fill Muffin Cups: Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

6. Bake & Cool: Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden brown.

7. Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack. Lightly dust with powdered sugar if desired and enjoy warm!
