Green Vegetables (Peas & Green Beans): Loaded with dietary fiber and essential micronutrients that nourish the gut microbiome.

Onions & Garlic: Contain natural organosulfur compounds known to help dampen systemic inflammation.

Ingredients

1 lb lean ground beef (or ground turkey)

 1 medium yellow onion, chopped

 2 cloves garlic, minced

4 cups beef broth (low sodium)

1 can (14.5 oz) diced tomatoes, undrained

 1 cup tomato sauce

3 medium potatoes, peeled and cut into bite-sized chunks

 2 carrots, sliced into rounds

1 cup green beans, cut into pieces

1 cup sweet corn (fresh, canned, or frozen)

 1 cup sweet green peas

 1 tsp Italian seasoning

 1 bay leaf

Salt and freshly ground black pepper, to taste

Instructions

1. Brown the Beef: Heat a large Dutch oven or soup pot over medium heat. Add the ground beef and chopped onion, cooking until the beef is fully browned and the onions are soft. Drain any excess fat.

2. Add Garlic & Liquids: Stir in the minced garlic and cook for 1 minute until fragrant. Pour in the beef broth, diced tomatoes, and tomato sauce.

3. Add Vegetables & Seasoning: Add the potatoes, carrots, green beans, corn, peas, Italian seasoning, and bay leaf. Season with salt and black pepper to taste.

4. Simmer: Bring the soup to a boil, then reduce the heat to low, cover, and let simmer for 30–35 minutes until the potatoes and carrots are tender.

5. Serve: Remove the bay leaf, check seasonings, ladle into warm bowls, and enjoy this cozy classic!
