Ingredients
2 cups (250 g) all-purpose flour
2 tsp baking powder
½ tsp ground cinnamon
¼ tsp salt
½ cup (115 g) unsalted butter, softened
⅔ cup (130 g) granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup (120 ml) milk
1½ cups tart apples, peeled and diced into small cubes
Instructions
1. Preheat & Prep: Preheat your oven to 375°F (190°C) and line a 6-cup muffin tin with paper liners.
2. Combine Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
3. Cream Butter & Sugar: In a separate large bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy.
4. Add Wet Ingredients: Beat in the large eggs one at a time, followed by the vanilla extract.
5. Alternate Wet & Dry: Gradually add the dry ingredient mixture to the butter mixture, alternating with the milk, stirring just until combined. Do not overmix.
6. Fold in Apples: Gently fold the peeled and diced tart apples into the batter until evenly distributed.
7. Bake & Cool: Spoon the batter evenly into the prepared muffin cups. Bake for 18–20 minutes, or until golden on top and a toothpick inserted into the center comes out clean. Let cool before serving!
