Ingredients

1 lb ground beef (or ground turkey)

1 bag coleslaw mix, 14 oz (shredded cabbage and carrots)

 1 tbsp sesame oil

2 tbsp soy sauce (or tamari for gluten-free)

 1 tbsp rice vinegar

 2 tsp garlic, minced

 1/2 tsp ground ginger

 3 green onions, sliced

Salt and black pepper, to taste

Instructions

1. Brown the Beef: Heat a large skillet or wok over medium-high heat. Add the ground beef, season with a pinch of salt and pepper, and cook until completely browned and cooked through. Drain any excess fat if necessary.

2. Add Aromatics: Stir in the minced garlic and ground ginger, cooking for about 1 minute until fragrant.

3. Sauté Coleslaw Mix: Add the sesame oil and the entire bag of coleslaw mix directly into the skillet with the beef. Toss well to combine.

4. Simmer with Sauce: Pour in the soy sauce and rice vinegar. Stir thoroughly, cover the skillet, and let simmer for 5–7 minutes, tossing occasionally, until the cabbage is tender-crisp.

5. Garnish & Serve: Remove from heat, stir in the sliced green onions, and serve warm for a delicious low-carb meal!
