Ingredients
1 cup non-fat Greek yogurt (or cottage cheese, blended smooth)
1 scoop (30g) strawberry or vanilla whey protein powder
2 tbsp light cream cheese or sugar-free cheesecake instant pudding mix
1/2 cup fresh or frozen strawberries, diced
1-2 tbsp sugar-free strawberry syrup or strawberry jam
1-2 tbsp zero-calorie sweetener (such as stevia or erythritol, to taste)
1-2 tbsp unsweetened almond milk (optional, to reach desired consistency)
Instructions
1. Prepare Cheesecake Base: In a medium bowl, combine the Greek yogurt, protein powder, light cream cheese (or cheesecake pudding mix), and sweetener. Whisk or mix vigorously until completely smooth and fluffy.
2. Add Milk (if needed): If the mixture is too thick, stir in 1 tablespoon of unsweetened almond milk at a time until a whipped, light consistency is reached.
3. Swirl in Strawberry: Gently fold in the diced fresh strawberries and drizzle the sugar-free strawberry syrup over the fluff. Swirl gently with a knife to create a marbled strawberry look.
4. Chill & Serve: Spoon into a bowl or container and chill in the refrigerator for 10 minutes before serving.
