High-Protein Strawberry Matcha Cheesecake Fluff

Ingredients

 1 cup non-fat Greek yogurt (or low-fat cottage cheese, blended)

 1 scoop (30g) vanilla or strawberry whey protein powder

 2 tbsp light cream cheese or fat-free sugar-free cheesecake instant pudding mix

 1 tsp ceremonial grade matcha powder

 1/2 cup fresh strawberries, chopped (plus extra for topping)

 1-2 tbsp zero-calorie sweetener (such as stevia or erythritol, to taste)

 1-2 tbsp unsweetened almond milk (if needed to adjust texture)

Instructions

1. Prepare the Strawberry Base: In a mixing bowl, combine the Greek yogurt, whey protein powder, light cream cheese (or pudding mix), and sweetener. Whisk or mix thoroughly until smooth and fluffy.

2. Layer & Flavor: Fold in half of the chopped fresh strawberries into the yogurt mixture.

3. Add Matcha Layer: Divide the mixture into two parts. In one part, sift in the matcha powder and mix gently until fully incorporated into a light green fluff.

4. Assemble: In meal-prep containers or dessert cups, layer the strawberry fluff, matcha fluff, and remaining chopped fresh strawberries.

5. Chill & Serve: Top with fresh strawberry slices and a light dusting of matcha powder. Chill in the refrigerator for 10 minutes before serving.
