Ingredients
• The Base & Topping: 1 cup unsalted butter, 1/2 cup packed brown sugar, and 1 teaspoon vanilla extract.
• The Oats: 3 cups rolled oats (old-fashioned oats work best for texture).
• The Filling: 1 cup semi-sweet chocolate chips and 1/2 cup creamy peanut butter.
Instructions
1. Prepare the Pan: Grease an 8×8 inch square baking dish or line it with parchment paper for easy removal.
2. Cook the Oat Mixture: In a large saucepan, melt the butter over medium heat. Stir in the brown sugar and vanilla until smooth. Add the oats and cook for 2–3 minutes, stirring constantly until the oats are well-coated.
3. Layer the Base: Press half of the oat mixture firmly into the bottom of the prepared dish.
4. Make the Filling: In a small microwave-safe bowl (or a small saucepan over low heat), melt the chocolate chips and peanut butter together until smooth and glossy.
5. Assemble: Pour the chocolate-peanut butter mixture over the oat base and spread it evenly. Top with the remaining oat mixture, pressing down lightly.
6. Set & Serve: Refrigerate for at least 2–3 hours until firm. Slice into bars and serve.
Storage & Freezing Tips
• Freezing: These bars freeze beautifully. Store them in an airtight container with parchment paper between layers.
• Thawing: When ready to eat, simply thaw them at room temperature for about 10 minutes before serving.
