Grandpa’s 3-Ingredient Potato Soup

Ingredients

5-6 Large Potatoes: Peeled and diced.

1 Large Onion: Finely chopped.

Butter: Used for richness and as a final topping.

Preparation Method

1. Boil: Place the diced potatoes and onions in a pot or slow cooker. Add just enough water to cover them and boil until the potatoes are very soft. Do not drain the water, as it contains all the flavor and starch.

2. Mash: Use a potato masher to crush about half of the potatoes directly in the pot. This creates a thick, creamy consistency without needing flour or cream.

3. Finish with Butter: Stir in several tablespoons of butter until melted.

4. Serve: Ladle into bowls and serve with an extra pat of butter on top and plenty of black pepper.
