Crispy Semolina Potato Bites

Ingredients

4 medium potatoes, peeled and chopped

1 onion, finely chopped

3 cloves of garlic, minced

2 glasses (approx. 400-500ml) of water

1.5 cups semolina

A bunch of coriander and parsley, finely chopped

1 teaspoon paprika

1/2 teaspoon chili flakes (optional)

Salt to taste

Oil for frying

Preparation

1. Boil Potatoes: Boil the potatoes in salted water until they are soft. Drain and mash them thoroughly while still warm until smooth.

2. Cook the Base: In a large pan, add the 2 glasses of water, chopped onion, minced garlic, paprika, chili flakes, and salt. Bring the mixture to a boil.

3. Add Semolina: Gradually pour in the semolina while stirring constantly to avoid lumps. Continue cooking and stirring on low heat until the mixture thickens and pulls away from the sides of the pan.

4. Combine: Mix the semolina dough with the mashed potatoes. Add the chopped coriander and parsley, kneading everything together until you have a uniform dough.

5. Shape: Take small portions of the dough and roll them into balls. Use your finger to press a small hole in the center of each ball to create a “donut” shape (vada style).

6. Fry: Heat oil in a deep skillet over medium-high heat. Fry the potato bites in batches until they are golden brown and crispy on all sides.

7. Serve: Drain on paper towels and serve hot with your favorite dipping sauce.
