High in lean protein and naturally low-carb, this nutrient-dense soup is fully calculated for Weight Watchers and designed with anti-inflammatory ingredients—making it the perfect fall or winter dinner recipe.

Anti-Inflammatory Highlights

Cabbage: Loaded with vitamins C and K, as well as powerful antioxidants that help lower systemic inflammation.

Garlic & Onions: Contain active organosulfur compounds that support immune function and reduce inflammatory responses.

Low-Sodium Beef Broth: Provides vital minerals that support gut health without causing excess sodium retention.

Ingredients

1 lb lean ground beef (93/7)

 1 medium yellow onion, diced

 3 cloves garlic, minced

4 cups green cabbage, chopped into bite-sized pieces

 2 medium carrots, thinly sliced

1 can (14.5 oz) diced tomatoes (no added sugar)

 4 cups low-sodium beef broth

½ cup cooked brown rice (optional, adjust according to your carb preferences)

 1 tsp smoked paprika

 ½ tsp dried thyme

Salt and freshly ground black pepper, to taste

1 tbsp extra virgin olive oil

Instructions

1. Brown the Beef: Heat extra virgin olive oil in a large Dutch oven or soup pot over medium heat. Add the ground beef, onion, and garlic. Cook for 6–8 minutes until the beef is fully browned, breaking it apart with a spoon. Drain any excess fat if necessary.

2. Season: Add smoked paprika, dried thyme, salt, and black pepper. Stir well for 1 minute to coat the beef and release the aromatics.

3. Combine Ingredients: Add the chopped cabbage, sliced carrots, diced tomatoes with their juices, and low-sodium beef broth. Bring the mixture to a boil.

4. Simmer: Reduce the heat to low, cover with a lid, and simmer for 20–25 minutes until the cabbage and carrots are tender.

5. Add Rice & Finish: Stir in the cooked brown rice (if using) and simmer uncovered for an additional 5 minutes until heated through.

6. Garnish & Serve: Ladle into bowls and garnish with fresh parsley if desired. Serve hot and enjoy!
