Apple Cocoa Slim Cake

Prep time: 10 mins | Bake time: 35–40 mins | Servings: 8 slices

Ingredients

Cake Base:

2 medium sweet apples (such as Gala or Fuji), cored and chopped (peel can be left on or removed)

 2 large eggs

⅓ cup (approx. 30g) unsweetened dark cocoa powder

 1 tsp baking powder

 1 pinch of salt

Optional sweetener: 1–2 tbsp zero-calorie sweetener (e.g., erythritol or stevia) if you prefer a sweeter taste

Optional Sugar-Free Glaze:

 2 tbsp unsweetened cocoa powder

1–2 tbsp warm water or unsweetened milk of choice

1 tbsp powdered zero-calorie sweetener or maple-flavored keto syrup

Instructions

1. Prep the Oven:

Preheat your oven to 350°F (175°C).

Line a small loaf pan with parchment paper or lightly grease it.

2. Blend the Batter:

Place the chopped apples, eggs, unsweetened cocoa powder, baking powder, and a pinch of salt (plus optional sweetener) into a high-speed blender or food processor.

Blend on high until completely smooth and creamy with no remaining apple chunks.

3. Bake:

Pour the blended batter into the prepared loaf pan and smooth the top.

Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

4. Cool & Glaze:

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For the glaze: Whisk together the cocoa powder, sweetener, and warm water/milk until smooth and glossy. Drizzle evenly over the top of the cake.

5. Slice & Serve:

Slice into portions and enjoy cold or at room temperature! Store leftovers in an airtight container in the refrigerator for up to 5 days.
