Baked Cottage Cheese Eggs

Ingredients

 6 large eggs

 1 cup cottage cheese

 1/4 cup milk

 1/4 cup shredded cheddar cheese

 1/4 tsp salt

 1/4 tsp black pepper

 Optional add-ins: chopped vegetables (spinach, tomatoes, onions), cooked bacon or sausage, fresh chives or herbs

Instructions

1. Preheat & Prepare: Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or 6-cup ramekin/muffin tin with non-stick spray or butter.

2. Blend or Whisk: In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until well combined. (Tip: For a smoother, soufflé-like texture, blend the cottage cheese, eggs, and milk in a blender before baking).

3. Add Mix-Ins: Fold in your choice of optional vegetables, bacon, or herbs.

4. Assemble & Top: Pour the egg mixture into the prepared baking dish. Top evenly with the shredded cheddar cheese and a sprinkle of chopped fresh chives.

5. Bake & Serve: Bake for 25–30 minutes, or until the center is set and the cheese on top is melted and golden brown. Let cool for 5 minutes before slicing and serving.
