Crispy Garlic & Herb Chicken Zucchini Fritters

Ingredients

For the Fritters

 1 lb ground chicken (or ground turkey)

 1 medium zucchini, grated

 1 large egg, beaten

 ½ cup grated Parmesan cheese

 ¼ cup almond flour (or breadcrumbs)

 2 cloves garlic, finely minced

 2 tbsp fresh parsley or chives, finely chopped

 ½ tsp onion powder

 ½ tsp sea salt

 ¼ tsp freshly cracked black pepper

 2 tbsp olive oil or avocado oil (for pan-searing)

For the Herb Dipping Sauce

 ½ cup sour cream or plain Greek yogurt

 1 tbsp fresh dill, finely chopped

 1 tbsp fresh parsley, finely chopped

 1 tsp lemon juice

 A pinch of garlic powder and salt

Instructions

1. Prep the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth. Twist and squeeze vigorously over the sink to remove as much moisture as possible. Do not skip this step, or your fritters will become soggy.

2. Mix the Batter: In a large bowl, combine the ground chicken, squeezed zucchini, beaten egg, Parmesan cheese, almond flour, minced garlic, chopped herbs, onion powder, salt, and pepper. Mix thoroughly using a spatula or your hands until well combined.

3. Form the Patties: Shape the mixture into uniform, compact patties (about 2 to 3 inches wide). If the mixture feels a bit too sticky, lightly coat your hands with a touch of olive oil.

4. Pan-Sear to Perfection: Heat 2 tablespoons of oil in a large skillet over medium-high heat. Carefully add the patties to the pan, ensuring you don’t overcrowd it. Cook for 5 to 6 minutes on the first side until deeply golden-brown and crispy, then flip and cook for another 4 to 5 minutes until the chicken is completely cooked through (internal temperature reaches 165°F/74°C).

5. Whip up the Sauce: While the fritters are cooking, whisk together all the dipping sauce ingredients in a small bowl until completely smooth.

6. Serve Hot: Transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve immediately alongside the chilled herb dipping sauce!
