6 teaspoons (2 tablespoons) chia seeds
2 teaspoons local honey
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
The fresh base (to complete the pudding):
1 ripe banana (mashed until smooth)
⅔ cup milk (whole milk, almond milk, or oat milk work beautifully)

Step 1: Prep the Banana Base
In a medium bowl or a jar, peel the ripe banana and mash it thoroughly with a fork until it becomes a smooth puree with minimal lumps.
Step 2: Mix the Liquid and Flavors
Pour the milk directly into the mashed banana. Add the local honey, vanilla extract, and ground cinnamon. Whisk everything together until the honey dissolves and the cinnamon is evenly distributed.
Step 3: Add the Chia Seeds
Stir in the 6 teaspoons of chia seeds. Mix vigorously for about 30 to 60 seconds to ensure the seeds don’t clump together at the bottom.
Step 4: Let it Rest and Settle
Let the mixture sit on the counter for about 5 minutes, then give it one more thorough stir. This second stir breaks up any sneaky clumps that formed as the chia seeds began to absorb the liquid.
Step 5: Chill and Set
Cover the jar or bowl and place it in the refrigerator for at least 2 hours (or leave it overnight). During this time, the chia seeds will plump up and transform the liquid into a thick, velvety pudding.
Step 6: Serve
Before eating, give the pudding a gentle stir. Top with a few fresh banana slices, an extra dust of cinnamon, or a tiny drizzle of honey if desired, and enjoy your cozy breakfast!
