These golden, pan-seared veggie tots are an excellent low-carb, flour-free alternative to traditional potato sides. Packed with grated zucchini, carrots, and bell peppers, they are perfect for anyone looking for a quick, healthy snack or a light dinner option.
Ingredients
• 2 medium zucchinis, finely grated
• 1 medium carrot, finely grated
• 1/2 green bell pepper, finely diced
• 2 large eggs
• 1/2 cup shredded mozzarella or parmesan cheese (optional, for binding and flavor)
• Salt and black pepper to taste
• 1/2 teaspoon garlic powder
• 1 tablespoon olive oil (for pan-searing)
Instructions
1. Squeeze Out Excess Moisture
• Place the grated zucchini and carrot in a clean kitchen towel or cheesecloth.
• Squeeze forcefully over the sink to remove as much water as possible. This step is crucial to ensure your tots hold their shape and get crispy without using flour.
2. Mix the Ingredients
• In a large bowl, combine the squeezed zucchini and carrots with the finely diced green bell pepper.
• Add the two eggs, shredded cheese (if using), garlic powder, salt, and black pepper as displayed in the top panel of image_20.png. Stir everything thoroughly until well combined.
3. Shape the Tots
• Take a small handful of the mixture and press it firmly between your palms, shaping it into an oblong, cylinder-like tot. Repeat until all the batter is used.
4. Cook Until Golden
• Heat the olive oil in a large non-stick skillet over medium heat.
• Carefully place the tots into the skillet. Cook for 3 to 4 minutes per side, gently flipping them with a spatula until they develop a beautiful brown, crispy crust on all sides.
5. Serve
• Transfer the tots to a plate. Serve them warm on their own or alongside a light yogurt dipping sauce. As shown in the bottom panel of image_20.png, they turn out perfectly tender on the inside with a savory, seared exterior.
