Weight-Loss Mini Muffins – Apple, Raisin & Oat

These wholesome mini muffins are made with no sugar and no flour. They are packed with fiber from oats and fresh apples, making them a perfect guilt-free snack or breakfast on the go.

Ingredients

2 cups rolled oats (old-fashioned)

1 cup unsweetened applesauce

2 medium apples, grated (remove excess juice)

1/2 cup raisins

2 eggs (or flax eggs for vegan)

1 tsp baking powder

1 tsp cinnamon

1/2 tsp nutmeg

Pinch of salt

Optional: chopped nuts or seeds for extra crunch

Instructions

1. Prep the Oven and Pan

Preheat your oven to 350°F (175°C). Grease a mini-muffin tin with a light coating of cooking spray or use paper liners to prevent sticking.

2. Combine Wet Ingredients

In a large bowl, whisk together the eggs, unsweetened applesauce, and grated apples until well combined.

3. Mix in Dry Ingredients

Add the rolled oats, baking powder, cinnamon, nutmeg, and a pinch of salt. Stir until the oats are fully incorporated into the wet mixture. Fold in the raisins (and optional nuts/seeds if using) at the end.

4. Fill and Bake

Spoon the batter into the mini-muffin tin, filling each cup nearly to the top. As seen in image_12.png, the muffins have a rustic, oat-textured appearance. Bake for 15–20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

5. Cool and Enjoy

Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. These muffins are best enjoyed warm or can be stored in the refrigerator for a quick snack throughout the week.
