Ingredients
1 lb Great Northern beans (dried)
6 cups chicken or vegetable broth
1 large onion, chopped
3 carrots, sliced into rounds
2 celery stalks, chopped
3 cloves garlic, minced
1 tsp dried thyme
1 bay leaf
2 tbsp olive oil
Salt and black pepper, to taste
2 small potatoes, diced (optional)
Instructions
1. Soak the Beans: Rinse the dried Great Northern beans thoroughly. Place them in a large bowl, cover with plenty of water, and let soak for at least 8 hours or overnight. Drain and rinse before cooking.
2. Sauté Aromatics: Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the chopped onion, sliced carrots, and chopped celery stalks, cooking for 5–7 minutes until tender and fragrant.
3. Add Garlic & Herbs: Stir in the minced garlic, dried thyme, and bay leaf, cooking for 1 minute until aromatic.
4. Simmer: Add the soaked and drained beans, chicken or vegetable broth, and diced potatoes (if using) to the pot. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 1 to 1.5 hours, or until the beans are tender.
5. Season & Serve: Season with salt and black pepper to taste. Remove the bay leaf, ladle into warm bowls, and enjoy!
