Cilantro & Parsley: Rich in antioxidant flavonoids and vitamins that help protect cells and reduce oxidative stress.

Ingredients

 1 cucumber, sliced thin

1 cup pineapple chunks, fresh or canned

 ¼ red onion, diced small

 1 tbsp apple cider vinegar

 1 tsp honey or sugar

Pinch of salt and black pepper

 Fresh cilantro or parsley, chopped

Instructions

1. Prepare the Vegetables & Fruit: Thinly slice the cucumber, dice the red onion small, chop the fresh cilantro or parsley, and prepare your pineapple chunks.

2. Mix the Dressing: In a small bowl or directly inside a clean mason jar, whisk together the apple cider vinegar, honey (or sugar), a pinch of salt, and black pepper.

3. Combine Ingredients: Add the sliced cucumbers, pineapple chunks, and diced red onion into the jar with the dressing.

4. Toss & Marinate: Sprinkle the chopped cilantro or parsley on top. Seal the jar with a lid and shake gently, or toss everything well in a bowl.
