Ingredients
1 pound ground beef (or beef stew meat)
2 tablespoons oil
1 onion, chopped (or 1/2 tsp onion powder)
2 cloves garlic, minced (or 1/2 tsp garlic powder)
2 large potatoes, diced
1 cup carrots, sliced
1 cup green beans, cut up
1 cup corn
1 cup peas
15 oz can diced tomatoes
4 to 6 cups beef broth
1 teaspoon salt
3/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Instructions
1. Brown the Beef: Heat the oil in a large soup pot or Dutch oven over medium-high heat. Add the ground beef and chopped onion, cooking until the beef is thoroughly browned and the onions are soft (about 6–8 minutes). Drain any excess grease.
2. Add Aromatics & Seasonings: Stir in the minced garlic, salt, black pepper, garlic powder, and onion powder, cooking for about 1 minute until fragrant.
3. Add Broth & Tomatoes: Pour in the beef broth and the 15 oz can of diced tomatoes (with their juices). Bring the liquid to a rolling boil.
4. Add Vegetables: Stir in the diced potatoes, sliced carrots, green beans, corn, and peas.
5. Simmer: Reduce the heat to low, cover the pot with a lid, and let the soup simmer gently for 25–30 minutes, or until the potatoes and carrots are fork-tender.
6. Serve: Ladle hot into bowls and enjoy your comforting, homemade vegetable beef soup!
