Anti-Inflammatory Highlights

Raw Pecans: Rich in omega-9 fats, manganese, and polyphenols that combat systemic inflammation and support heart health.

Ceylon Cinnamon: Contains potent antioxidants that help balance blood sugar levels and improve insulin sensitivity.

Rolled Oats: High in beta-glucan fiber, promoting optimal digestion and gut lining health.

Ingredients

 2 cups rolled oats

 1 cup raw pecan halves

 1 tsp ground cinnamon

 ½ tsp baking powder

 ¼ tsp sea salt

1 ½ cups unsweetened almond milk (or milk of choice)

 2 large eggs

⅓ cup sugar-free monk fruit maple syrup (or stevia equivalent)

 1 tsp pure vanilla extract

1 tbsp melted coconut oil or grass-fed butter

Instructions

1. Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with non-stick cooking spray.

2. Combine Dry Ingredients: In a large bowl, mix together the rolled oats, ground cinnamon, baking powder, sea salt, and half of the pecan halves.

3. Whisk Wet Ingredients: In a separate medium bowl, whisk together the almond milk, eggs, sugar-free syrup, melted coconut oil, and vanilla extract until smooth.

4. Layer in Pan: Pour the dry oat mixture into the greased baking dish. Evenly pour the wet liquid mixture over the oats, pressing gently with a spatula so all the oats are submerged.

5. Top with Pecans: Arrange the remaining pecan halves generously across the top of the oat mixture.

6. Bake & Serve: Bake for 22–25 minutes until the center is set and the pecans on top are golden and fragrant. Let cool for 5 minutes, slice into 4 portions, and enjoy warm!
