Anti-Inflammatory Highlights

Cottage Cheese: Rich in essential amino acids and selenium, which help combat oxidative stress and promote muscle recovery.

Pasture-Raised Eggs: High in lutein, zeaxanthin, and omega-3 fatty acids that support metabolic health and reduce inflammation.

Italian Herbs (Oregano & Basil): Contain potent polyphenols and essential oils known for their natural antimicrobial and anti-inflammatory properties.

Ingredients

 1 cup fat-free or 2% cottage cheese

 2 large eggs

1 cup shredded mozzarella cheese (part-skim or low-fat)

1 tsp Italian seasoning (or dried oregano)

 ¼ tsp garlic powder (optional)

Pinch of salt and black pepper

Instructions

1. Preheat & Prep: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper and lightly spray it with non-stick cooking spray.

2. Combine Ingredients: In a mixing bowl or food processor, combine the cottage cheese, eggs, 1/2 cup of the shredded mozzarella, Italian seasoning, garlic powder, salt, and pepper. (For a smoother texture, blend the cottage cheese and eggs together first, or mix as-is for a rustic texture).

3. Shape the Crust: Pour the mixture onto the parchment-lined baking sheet. Use a spatula to spread the mixture evenly into a thin, round circle (about 10–12 inches in diameter).

4. Bake Crust: Bake for 20–25 minutes until the crust is set, firm to the touch, and deep golden brown around the edges.

5. Add Toppings & Crisp: Remove the crust from the oven. Top with low-sugar marinara sauce, the remaining 1/2 cup shredded mozzarella, sliced cherry tomatoes, and fresh basil leaves.

6. Broil & Serve: Return to the oven and bake or broil for an additional 3–5 minutes until the cheese is melted and bubbly. Slice into 8 pieces and serve immediately!
