Base & Crust:
2 sheets low-carb or cinnamon graham crackers, crushed (divided)
Protein Fluff:
1 tub (8 oz) sugar-free caramel (or regular) whipped topping (such as Cool Whip), thawed
1 scoop (30g) vanilla or caramel protein powder
2 tbsp powdered peanut butter (PB2) or creamy peanut butter
1/2 tsp instant espresso powder
1/2 tsp caramel extract
Optional: 1 tbsp sugar-free caramel syrup for drizzle
Instructions
1. Prepare Graham Base: Press 2/3 of the crushed graham cracker crumbs into the bottom of a container, tub, or bowl to create the crumbly base layer.
2. Whip the Mixture: In a mixing bowl, gently fold together the thawed whipped topping, protein powder, powdered peanut butter, instant espresso powder, and caramel extract until completely smooth, light, and airy.
3. Layer & Top: Scoop the peanut butter protein fluff over the crushed graham cracker base.
4. Garnish & Chill: Sprinkle the remaining crushed graham crumbs over the top and add a drizzle of sugar-free caramel syrup if desired. Chill in the fridge for 20 minutes (or freezer for 10 minutes) for a rich, mousse-like consistency before diving in!
