Cheesy Sausage and Potato Skillet

Ingredients:
4 large potatoes, sliced into wedges
2 tablespoons olive oil
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika (optional)
12 oz (340g) smoked sausage, sliced
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/4 cup milk
2 tablespoons butter
2 tablespoons all-purpose flour
Chopped chives or green onions for garnish
Instructions:
Roast the Potatoes:
Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the potato wedges with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika until evenly coated.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, turning halfway through, until the potatoes are golden and crispy.
Cook the Sausage:
While the potatoes are roasting, heat a large skillet over medium heat.
Add the sliced sausage to the skillet and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
Make the Cheese Sauce:
In the same skillet, melt the butter over medium heat.
Whisk in the flour and cook for 1-2 minutes to form a roux.
Gradually add the milk and heavy cream, whisking constantly until the mixture thickens.
Stir in the shredded cheddar cheese until melted and smooth. If the sauce is too thick, you can add a little more milk to reach the desired consistency.
Season the sauce with salt and pepper to taste.
Assemble the Dish:
Add the roasted potatoes and cooked sausage to the skillet with the cheese sauce.
Toss everything together until the potatoes and sausage are well coated with the sauce.
Garnish and Serve:
Garnish with chopped chives or green onions.
Serve the dish hot, either as a main course or as a side dish.
This cheesy sausage and potato skillet is a perfect comfort food, great for a cozy dinner or a satisfying lunch. Enjoy the combination of flavors and textures
