Crispy Zucchini Chips
Ingredients:
2 medium zucchinis
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
Cooking spray
Instructions:
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Slice zucchinis into thin rounds, about 1/8 inch thick.
Place flour in one bowl, beaten eggs in a second bowl, and a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper in a third bowl.
Dip each zucchini slice into flour, then eggs, and finally coat with the breadcrumb mixture.
Arrange the coated zucchini slices on the prepared baking sheet.
Lightly spray the zucchini slices with cooking spray.
Bake for 20-25 minutes, turning once halfway through, until golden brown and crispy.
Notes:
For extra crispiness, broil for the last 2-3 minutes, watching carefully to prevent burning.
Serve with marinara sauce or ranch dressing for dipping.
