Anti-Inflammatory Highlights

Chia Seeds: One of the richest plant sources of anti-inflammatory ALA omega-3 fatty acids and soluble fiber, promoting digestion and cellular health.

Unsweetened Almond Milk: Naturally low in calories and rich in antioxidant vitamin E to help fight oxidative stress.

Fresh Orange Zest & Juice: Delivers natural vitamin C and bioflavonoids that support immune function and reduce systemic inflammation.

Ingredients

 ½ cup black chia seeds

2 cups unsweetened almond milk (or coconut milk)

½ cup unsweetened plain Greek yogurt (0% fat, for extra protein)

 1 tbsp fresh orange zest

 2 tbsp fresh orange juice

 1 tsp pure vanilla extract

Liquid stevia or monk fruit drops to taste (optional)

Instructions

1. Whisk Base Liquids: In a medium mixing bowl, whisk together the unsweetened almond milk, plain Greek yogurt, fresh orange juice, orange zest, vanilla extract, and sugar-free sweetener until completely smooth.

2. Add Chia Seeds: Stir in the chia seeds thoroughly until evenly distributed throughout the liquid mixture.

3. Rest & Whisk Again: Let the mixture sit at room temperature for 5–10 minutes, then whisk vigorously once more to prevent the chia seeds from settling or clumping at the bottom.

4. Portion into Jars: Divide the pudding mixture evenly into 3 glass mason jars or airtight containers.

5. Chill & Serve: Seal the jars and refrigerate for at least 2 hours (or overnight) until thick and gelatinous. Garnish with fresh orange zest or a strawberry slice before serving chilled!
