2 ripe bananas, mashed
3 medium eggs
1/2 cup cottage cheese, blended until smooth
2 tbsp pure maple syrup
1 tsp vanilla extract
2 1/2 cups almond flour
1 tsp baking soda
1 tsp ground cardamom (or cinnamon)
1 cup + extra blueberries (fresh or frozen, no need to thaw)
Instructions
1. Preheat & Prepare: Preheat oven to 350°F (175°C). Line an 8×4-inch loaf pan with parchment paper or spray lightly with non-stick cooking spray.
2. Combine Wet Ingredients: In a large bowl, whisk together the mashed bananas, eggs, blended cottage cheese, maple syrup, and vanilla extract until smooth.
3. Mix Dry Ingredients: Stir in the almond flour, baking soda, and ground cardamom (or cinnamon) until a uniform batter forms.
4. Fold in Blueberries: Toss the blueberries in a small sprinkle of almond flour (to keep them from sinking) and gently fold 1 cup into the batter.
5. Fill & Top: Pour batter into the prepared loaf pan and smooth out the top. Press a few extra blueberries into the surface.
6. Bake & Cool: Bake for 50–60 minutes, or until a toothpick inserted near the center comes out clean. Allow to cool completely on a wire rack before slicing.
