Crispy Zucchini Sticks

Ingredients

 2 medium zucchini, cut into uniform sticks (fries)

 100g Parmesan cheese, grated

 100g breadcrumbs (Panko works best for extra crunch!)

 2 large eggs, beaten

 ½ tsp garlic powder

 ½ tsp salt + black pepper

 Olive oil spray (or oil for shallow frying)

1. Prep the Zucchini

 Cut each zucchini in half crosswise, then slice into quarter-inch sticks.

 Pro Tip: Lightly pat the sticks dry with a paper towel so the egg wash adheres properly.

2. Set Up Your Breading Station

 Bowl 1: Whisk the 2 eggs together.

 Bowl 2: Combine the breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper until well mixed.

3. Coat the Sticks

 Dip each zucchini stick into the beaten egg, letting excess drip off.

 Dredge through the Parmesan-breadcrumb mixture, pressing gently so the coating sticks evenly to all sides.

🍳 Cooking Methods:

 Oven Baked: Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper, arrange the sticks in a single layer, and spray generously with olive oil spray. Bake for 18–22 minutes, flipping halfway, until golden and crispy.

 Air Fryer (Recommended): Arrange in a single layer (do not overcrowd). Spray lightly with olive oil spray and air fry at 200°C (390°F) for 10–12 minutes, shaking/flipping halfway through.

 Pan Fried: Heat a few tablespoons of olive oil in a skillet over medium-high heat. Fry the sticks for 2–3 minutes per side until crisp and golden. Drain on paper towels.
