High-Protein Lemon Blueberry Whip

Ingredients

1 cup low-fat Greek yogurt (or cottage cheese, blended smooth)

1 scoop vanilla whey protein powder

1 tbsp sugar-free lemon pudding mix (or lemon zest and juice)

1/4 cup fresh or frozen blueberries

1-2 tbsp unsweetened almond milk (if needed for blending)

1 tsp crushed graham crackers (optional, for topping)

Instructions

1. Blend the Base: In a bowl or blender, combine the Greek yogurt, vanilla whey protein powder, and sugar-free lemon pudding mix.

2. Adjust Texture: Stir or blend until completely smooth and thick. If the mixture is too dry, add a splash of almond milk.

3. Fold in Blueberries: Gently fold the fresh or frozen blueberries into the lemon whip mixture.

4. Chill and Serve: Transfer the mixture into a meal prep container or serving dish. Top with extra blueberries, lemon zest, and crushed graham crackers if desired. Chill in the fridge for 30 minutes before serving.
