Ingredients
1 lb lean ground beef, 90%
3 large russet potatoes, sliced ¼-inch thick
1 onion, diced
1 green bell pepper, diced
1 can (14.5 oz) diced tomatoes (undrained)
Salt and black pepper to taste (pantry staples)
Instructions
1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease a deep 9×13-inch baking dish or a large casserole dish with non-stick cooking spray.
2. Layer the Potatoes: Arrange the sliced russet potatoes in an even layer across the bottom of the prepared baking dish. Season them generously with salt and black pepper.
3. Add the Ground Beef: Evenly crumble the raw, lean ground beef directly over the potato layer. Season the meat layer with another pinch of salt and pepper.
4. Scatter the Aromatics: Spread the diced onion and diced green bell pepper uniformly over the ground beef layer.
5. Pour the Tomatoes: Pour the entire can of undrained diced tomatoes evenly over the top, ensuring the juices spread across the ingredients to help cook the potatoes and steam the beef.
6. Bake Covered: Cover the dish tightly with aluminum foil. Bake in the preheated oven for 1 hour.
7. Finish and Serve: Remove the foil and bake for an additional 15 to 20 minutes, or until the potatoes are completely fork-tender and the top is slightly browned. Let it rest for 5 minutes before scooping and serving.
