Classic Bacon and Gruyère Quiche Lorraine

Ingredients

1 (9-inch) unbaked pie crust (homemade or store-bought)

 6 slices thick-cut bacon, chopped

1 cup Gruyère or Swiss cheese, shredded

1/2 cup sharp Cheddar cheese, shredded

 4 large eggs

 1 cup heavy cream

 1/2 cup whole milk

 1/4 tsp salt

 1/4 tsp black pepper

 1/8 tsp ground nutmeg

1 tbsp fresh chives or parsley, finely chopped (for garnish)

Instructions

1. Preheat and Blind Bake: Preheat your oven to 400°F (205°C). Fit the pie crust into a 9-inch pie plate or tart pan, crimping the edges. Line the crust with parchment paper, fill with pie weights (or dried beans), and bake for 10 minutes. Remove the weights and paper, and bake for an additional 3 to 5 minutes until the bottom is lightly golden. Reduce the oven temperature to 350°F (175°C).

2. Crisp the Bacon: In a skillet over medium heat, cook the chopped bacon until perfectly crisp. Remove with a slotted spoon and drain on paper towels.

3. Layer the Base: Sprinkle the cooked bacon pieces evenly across the bottom of the warm, blind-baked pie crust. Top the bacon with the shredded Gruyère and Cheddar cheeses.

4. Whisk the Custard: In a medium bowl, vigorously whisk together the eggs, heavy cream, whole milk, salt, black pepper, and ground nutmeg until smooth, light, and completely combined.

5. Pour and Bake: Carefully pour the egg mixture over the bacon and cheese layers in the pie crust. Bake at 350°F (175°C) for 35 to 40 minutes, or until the edges are golden brown and the center is set but still has a slight, delicate jiggle.

6. Cool and Serve: Allow the quiche to rest and set on a wire rack for 10 to 15 minutes before slicing. Garnish with a shower of fresh chopped chives or parsley.
