Ingredients
4 chicken thighs or breasts
8 oz mushrooms, sliced
1 small onion, diced
1 cup chicken broth
½ cup heavy cream or milk
2 tbsp butter
1 tsp thyme (plus extra sprigs for garnish)
Salt + pepper, to taste
Garlic powder, to taste
Optional: 1 tbsp all-purpose flour (to thicken the sauce)

Step 1: Season the Chicken
Preheat your oven to 375°F (190°C). Pat the chicken thighs or breasts dry with a paper towel. Season both sides generously with salt, black pepper, and garlic powder.
Step 2: Sear for Golden Flavor
Melt 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken and sear for 3 to 5 minutes on each side until a beautiful golden-brown crust forms (it doesn’t need to be fully cooked through yet). Transfer the chicken to an 8×8-inch or 9×9-inch baking dish.
Step 3: Sauté the Mushrooms and Onions
Turn the skillet down to medium heat and add the remaining tablespoon of butter. Toss in the diced onion and sliced mushrooms. Cook for about 5 minutes, stirring occasionally, until the onions are translucent and the mushrooms are tender and browned. Stir in the thyme.
Step 4: Build the Cream Sauce
If you want a thicker sauce, sprinkle 1 tablespoon of flour over the mushrooms and cook for 1 minute. Slowly pour in the chicken broth, scraping up any delicious browned bits from the bottom of the pan. Stir in the heavy cream or milk and bring the mixture to a gentle simmer for 2 minutes until it starts to thicken slightly. Season the sauce with a pinch of salt and pepper.
Step 5: Assemble and Bake
Pour the creamy mushroom sauce evenly over the chicken in the baking dish, ensuring the chicken pieces are beautifully coated. Bake uncovered for 20 to 25 minutes (if using breasts, check a bit earlier; thighs may take slightly longer) until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling.
Step 6: Garnish and Enjoy
Remove from the oven, garnish with fresh sprigs of thyme as seen in the photo, and let it rest for 5 minutes before serving. It pairs beautifully over a bed of mashed potatoes, white rice, or egg noodles
