📋 Ingredients
The Dry Base: 1 cup (100g) oatmeal (rolled or quick oats blended into a coarse flour texture)
The Natural Sweeteners:
3 medium apples, grated (peeled or unpeeled, up to you!)
1 ripe banana, thoroughly mashed
The Fruit Mix-ins:
100g (3.5oz) dried blueberries
100g (3.5oz) raisins
The Liquid: ½ cup (120ml) water
Optional Baking Boosters:
1 tsp baking powder (highly recommended to give this dense loaf a little lift!)
1 tsp ground cinnamon (for that classic cozy apple-pie flavor)
¼ cup chopped almonds or walnuts (as seen on top of the finished loaf in the photo)
🥣 Directions
Step 1: Prep Your Oven and Pan
Preheat your oven to 350°F (175°C). Line a standard loaf pan with parchment paper or use a silicone loaf pan (like the pink one shown in the photo) placed on a sturdy baking sheet.
Step 2: Process the Oats
To get the smooth loaf texture shown in the image, toss your 1 cup of oatmeal into a blender or food processor and pulse it for 20 to 30 seconds until it turns into a fine, flour-like powder.
Step 3: Mix the Wet and Dry
In a large mixing bowl, combine your oat flour, cinnamon, and baking powder (if using). Add the mashed banana, grated apples, and water. Stir thoroughly until the oat flour completely absorbs the moisture and a thick batter forms. Gently fold in the dried blueberries and raisins.
Step 4: Pour and Top
Spoon the thick batter into your prepared loaf pan, smoothing out the top with a spatula. If you want to replicate the photo perfectly, scatter a generous handful of sliced or chopped almonds over the top of the batter, pressing them down just a tiny bit so they stick.
Step 5: Bake to Perfection
Bake for 45 to 55 minutes. Because this loaf has no eggs or flour and relies on dense fruit moisture, it will remain quite soft while hot. You’ll know it’s done when the top is a beautiful golden brown and a toothpick inserted into the center comes out mostly clean.
Step 6: Cool Completely (The Secret Step!)
Let the loaf cool completely in the pan for at least 30 minutes, then transfer it to the refrigerator to chill for an hour before slicing. Chilling is essential here—it allows the oats to fully set so you can cut clean, beautiful slices without it crumbling. Slice it up and enjoy a truly guilt-free treat!
