Ingredients
1 box (18 oz) brownie mix
¼ cup all-purpose flour (this adds just enough structure so they hold their cookie shape instead of melting into a puddle)
2 large eggs
½ cup vegetable oil or melted butter
½ cup chocolate chips (optional, for extra fudginess)
🥣 Directions
Step 1: Prep the Oven and Pans
Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats.
Step 2: Mix the Dough
In a large bowl, whisk together the dry brownie mix and the ¼ cup of all-purpose flour. Add the 2 large eggs and the ½ cup of vegetable oil (or melted butter). Stir with a sturdy spoon or rubber spatula until a thick, shiny dough forms. Fold in the chocolate chips if you are using them.
Step 3: Scoop the Dough
The dough will be quite sticky! Use a cookie scoop or a spoon to drop rounded tablespoons of dough onto your prepared baking sheets, leaving about 2 inches of space between each cookie to allow for spreading.
Step 4: Bake to Fudgy Perfection
Bake for 10 to 12 minutes. The edges should look set, and the tops will develop that beautiful, shiny, crinkled “brownie skin.”
Step 5: Cool and Set
Do not try to move them right away! They will be incredibly soft out of the oven. Let them cool on the baking sheet for 5 minutes to firm up, then transfer them to a wire rack to cool completely. Grab a glass of milk and enjoy!
