These crispy, low-carb chimichangas deliver all the rich flavor of a traditional Mexican restaurant favorite without the high carb count. By using keto-friendly low-carb flour tortillas and a savory filling of seasoned meat and gooey melted cheese, you can pan-fry or bake them to crispy perfection. They are incredibly easy to assemble, making them a fantastic dinner treat for beginners and seasoned keto dieters alike.
Ingredients
The Wraps: 4 large low-carb tortillas (look for brands with 3–5g net carbs per tortilla)
The Protein Filling: 1 lb lean ground beef (or shredded rotisserie chicken), 1 tablespoon taco seasoning mix, 1/4 cup diced yellow onion
The Cheesy Core: 1 cup shredded Mexican blend cheese or Cheddar cheese (divided)
For Crisping: 2 tablespoons olive oil, avocado oil, or melted butter
The Toppings: 1/2 cup salsa or pico de gallo, 1/4 cup sour cream, fresh chopped cilantro, diced tomatoes
Instructions
Step 1: Cook the Savory Filling
Place a skillet over medium-high heat. Add the ground beef (or chicken) and diced onion. Cook until the meat is completely browned and the onions are soft, breaking it up with a spoon. Drain any excess fat. Stir in the taco seasoning and 2 tablespoons of water, letting it simmer for 2 minutes until the liquid is absorbed. Remove from heat.
Step 2: Warm the Tortillas
To make the low-carb tortillas pliable and prevent them from cracking when folded, microwave them on a plate covered with a damp paper towel for 15 to 20 seconds.
Step 3: Assemble the Chimichangas
Lay the warmed tortillas flat on a clean surface. Place a generous spoonful of the seasoned meat in the center of each tortilla. Top the meat with about 2 tablespoons of shredded cheese.
Step 4: Fold and Seal
Fold the left and right sides of the tortilla tightly over the filling. Starting from the bottom, roll the tortilla upward into a neat, compact burrito shape, tucking the edges securely so no filling escapes during cooking.
Step 5: Fry to Crispy Perfection
Heat the avocado oil or olive oil in a clean skillet over medium heat. Place the chimichangas seam-side down in the hot pan to seal them shut, just like the neatly rolled pairs shown in the top-left panel of image_14.png. Fry for 2 to 3 minutes per side, turning carefully, until the exterior becomes a beautiful, uniform golden-brown and crispy.
Step 6: Smother and Serve
Transfer the crispy chimichangas to plates. While they are piping hot, top them with the remaining shredded cheese so it melts over the crust. To match the serving styles in image_14.png, garnish with a generous dollop of sour cream, fresh salsa, and a sprinkle of diced tomatoes. Slice them in half diagonally to show off the cheesy, stuffed interior captured in the bottom panel.
