These 3-ingredient chocolate protein muffins are a total game-changer for meal prep or a quick sweet tooth fix. By combining a zero-sugar cake mix with a high-protein shake, you completely bypass the need for oil, eggs, or flour. They bake up incredibly fluffy, rich, and full of chocolate flavor with minimal effort.
Ingredients
The Base: 1 box (approx. 15 oz) Zero Sugar Devil’s Food cake mix (e.g., Betty Crocker)
The Liquid & Protein: 1 bottle (11.5 oz) Fairlife Chocolate Nutrition Shake (or equivalent 30g protein shake)
The Mix-in: ½ cup semi-sweet or sugar-free chocolate chips
Instructions
Step 1: Gather the Ingredients
Preheat your oven to 350°F (175°C) and line a standard 12-count muffin tin with paper liners or spray it generously with non-stick cooking spray. Gather your ingredients as shown in panel 1 of image_15.png.
Step 2: Mix the Batter
Empty the entire box of zero-sugar chocolate cake mix into a large mixing bowl. Pour the entire bottle of the chocolate protein shake directly into the bowl, as illustrated in panel 2 of image_15.png. Use a spatula or wooden spoon to stir the mixture until fully combined, smooth, and free of large flour pockets. Fold in about three-quarters of your chocolate chips.
Step 3: Portion into the Pan
Divide the thick chocolate batter evenly among the 12 muffin cups. Sprinkle the remaining chocolate chips over the top of each muffin to ensure a beautiful, gooey presentation once baked, matching panel 3 of image_15.png.
Step 4: Bake Until Set
Place the muffin tin in the preheated oven and bake for 18 to 22 minutes. The muffins are finished when the tops have rounded nicely and a toothpick inserted into the center of a muffin comes out clean (minus any melted chocolate chips).
Step 5: Cool and Enjoy
Remove the pan from the oven and let the muffins rest for 5 minutes before transferring them to a wire rack. As shown in panel 4 of image_15.png, they will have a perfectly domed, rustic crust studded with rich chocolate. Store leftovers in an airtight container for up to 4 days, or freeze them for an easy grab-and-go breakfast.
