This quick and easy olive dip is the perfect crowd-pleaser for parties, game days, or a simple afternoon snack. Combining a rich, creamy base with briny olives, fresh herbs, and a punch of citrus, it comes together in just minutes and requires absolutely no cooking, making it an excellent recipe for beginners.
Ingredients
Base: 8 oz cream cheese (softened), 1/2 cup sour cream or plain Greek yogurt
Olives: 1 cup pitted green olives (chopped), plus 3 whole olives for garnish
Aromatics & Herbs: 2 tbsp fresh parsley or dill (finely chopped), 1 clove garlic (minced)
Zest: 1 tsp lemon juice
Topping: 1 tbsp extra virgin olive oil, 1 tbsp diced pimientos or roasted red peppers
Instructions
Step 1: Blend the Creamy Base
In a medium mixing bowl, combine the softened cream cheese, sour cream (or Greek yogurt), minced garlic, and lemon juice. Use a hand mixer or a sturdy spatula to blend the ingredients together until the mixture is completely smooth, fluffy, and free of lumps.
Step 2: Incorporate the Flavor Makers
Gently fold the chopped green olives and the finely chopped fresh herbs into the cream cheese mixture. Stir well to ensure the briny olives and herbs are evenly distributed throughout the dip.
Step 3: Chill and Set
Transfer the dip into a glass serving jar or a presentation bowl. Cover the container and place it in the refrigerator for at least 30 minutes. This chilling time allows the flavors of the garlic, herbs, and olives to meld together fully.
Step 4: Garnish and Serve
Just before serving, remove the dip from the refrigerator. As shown in image_3.png, drizzle extra virgin olive oil over the top, allowing it to pool slightly in the ridges. Garnish the center with three whole green olives and a scatter of diced pimientos or roasted red peppers for a vibrant pop of color. Serve alongside pita chips, crackers, or fresh vegetable batons.
