No-Bake Strawberry Icebox Pie

This retro Southern classic is the ultimate creamy, cool summer dessert. It requires absolutely no baking, only a few simple ingredients, and takes under 10 minutes to prep. By folding sweet strawberries into a silky whipped cream and condensed milk base, you get a gorgeous pink filling with beautiful peaks that sets up perfectly in a crisp graham cracker crust.

Ingredients

 1 pre-made Graham Cracker Crust (9-inch)

1 can (14 oz) Eagle Brand Sweetened Condensed Milk

1 tub (8 oz) Cool Whip (regular-size, thawed)

1 cup fresh strawberries, pureed or finely mashed (plus extra sliced strawberries for garnish)

3 tbsp lemon juice (essential to help the condensed milk thicken and set)

Instructions

1. Prep the Strawberry Base

Wash, hull, and chop your fresh strawberries. Use a blender or food processor to puree them smoothly, or mash them tightly with a fork if you prefer tiny bits of fruit throughout your pie.

2. Blend the Creamy Filling

In a large mixing bowl, pour in the entire can of Eagle Brand Sweetened Condensed Milk. Stir in the mashed strawberries and the lemon juice until completely combined. The acid in the lemon juice reacts naturally with the condensed milk, helping it thicken into a rich, sliceable texture.

3. Fold in the Fluff

Gently fold in the thawed Cool Whip using a rubber spatula. Mix with a slow, sweeping motion from the bottom of the bowl upward until the mixture is uniform and a beautiful pastel pink color. Be careful not to over-mix, as you want to keep that light, airy texture!

4. Fill the Crust

Spoon the fluffy pink filling directly into your Graham Cracker Crust. Use the back of your spoon or a spatula to spread it evenly to the edges, creating swirling, decorative peaks across the top surface, exactly like the rustic styling shown in the image.

5. Chill to Set

Place the pie uncovered into your refrigerator for at least 4 hours (or freeze it for 2 hours if you prefer an ice-cream-like texture).

6. Garnish and Serve

Right before serving, garnish the top with a few sliced fresh strawberries. Slice with a sharp knife dipped in warm water for perfectly clean, beautiful pieces. Store any leftovers covered in the fridge.
