These easy foil packets bring a delicious blend of sweet, savory tropical flavors straight to your table with almost zero cleanup. By steaming chicken breasts directly inside aluminum foil with juicy pineapple chunks, crisp bell peppers, and rich teriyaki sauce, you lock in all the natural juices. They are excellent for easy weeknight dinners, meal prep, or summer grilling!
Ingredients
2 large boneless, skinless chicken breasts
1 cup fresh pineapple chunks
1/4 cup teriyaki sauce (plus a little extra for a final drizzle)
1 tablespoon olive oil
1 red bell pepper, sliced
1 small zucchini, sliced into half-moons (optional, as seen in the image)
2 green onions, chopped (for garnish)
Instructions
1. Preheat and Prep your Foil
Preheat your oven to 400°F (204°C), or heat your outdoor grill to medium-high heat.
Cut two large pieces of heavy-duty aluminum foil (about 12×12 inches each) and lay them flat on your counter. Lightly coat the center of each piece with a splash of olive oil or non-stick cooking spray.
2. Season and Arrange the Base
Place one chicken breast right in the middle of each piece of foil.
Arrange the sliced red bell pepper and optional zucchini slices around and tucked under the chicken breasts.
3. Sauce and Top with Sweet Pineapple
Brush the teriyaki sauce generously over both sides of the chicken breasts, ensuring they are completely coated for maximum flavor absorption.
Pile the fresh pineapple chunks directly on top of the chicken breasts, exactly like the vibrant layout styled in the image.
4. Seal the Packets
Bring the long edges of the foil together over the center of the food, folding them down tightly to create a neat seam.
Fold and crimp the open ends of the packet tightly to completely seal the pouch. Leaving a tiny bit of headspace inside the pouch allows the hot steam to circulate freely and cook the chicken uniformly.
5. Bake or Grill to Perfection
If Oven Baking: Place the foil packets directly onto a large baking sheet. Bake for 20 to 25 minutes until the chicken is cooked through and registers an internal temperature of 165°F (74°C).
If Grilling: Place the pouches straight onto the preheated grill grates. Cover and cook over medium-high heat for 15 to 20 minutes, flipping once halfway through.
6. Garnish and Serve
Carefully open the sealed packets (watch out for hot escaping steam!). Drizzle a tiny bit of fresh teriyaki sauce over the top and scatter the chopped green onions over the bubbling dish before digging in.
