Golden Herbed Chicken Fritters

Ingredients

For the Fritters:

500g Ground chicken breast (minced).

1 Large egg (to bind).

½ cup Breadcrumbs (or almond flour for a low-carb version).

2 cloves Garlic, minced.

1 small Onion, very finely chopped.

½ cup Fresh parsley and cilantro, finely chopped.

Seasoning: Salt, black pepper, paprika, and a pinch of ground ginger.

2 tbsp Olive oil (for cooking).

For the Green Dipping Sauce:

1 cup Greek yogurt or Light mayonnaise.

1 tbsp Pesto sauce or finely minced fresh mint and cilantro.

1 tsp Lemon juice.

• Salt and pepper to taste.

Instructions

1. Mix: In a large bowl, combine the ground chicken, chopped onion, garlic, herbs, and all the spices.

2. Bind: Add the egg and breadcrumbs. Mix well until the mixture holds its shape.

3. Shape: Form the mixture into medium-sized round patties (as seen in the image).

4. Cook:

Pan-Fry: Heat olive oil in a skillet over medium heat. Fry the patties for 5–7 minutes per side until they are golden brown and cooked through.

Air Fryer/Oven: Lightly coat with oil and cook at 200°C for about 15–20 minutes, flipping halfway through.

5. Serve: Serve hot with the creamy green sauce on the side.
