Ingredients:
– 1 lb beef stew meat, cut into cubes

– 1/2 teaspoon ground turmeric
– 1/4 teaspoon ground cinnamon
– 1 Scotch bonnet pepper, chopped (optional, for heat)
– 2 large potatoes, peeled and diced
– 1 can (14 oz) coconut milk
– 1 cup beef broth
– Salt and freshly ground black pepper, to taste
– Fresh cilantro, chopped, for garnish (optional)
Instructions:
1. Brown the beef:
Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and cook, turning occasionally, until browned on all sides (about 5-7 minutes). Remove the beef and set aside.
2. Cook the aromatics:
In the same pot, add the chopped onion, garlic, and grated ginger. Sauté for 3-4 minutes until softened and fragrant.
3. Add the spices:
Stir in the curry powder, allspice, turmeric, cinnamon, and Scotch bonnet pepper (if using). Cook for another 1-2 minutes, allowing the spices to toast and release their aromas.
4. Add the liquids:
Return the browned beef to the pot. Add the diced potatoes, coconut milk, and beef broth. Stir to combine. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 45 minutes to 1 hour, until the beef is tender and the potatoes are cooked through.
5. Season and serve:
Season the curry with salt and pepper to taste. Garnish with chopped cilantro, if desired.

– If you like extra heat, leave some seeds in the Scotch bonnet pepper or use more peppers.
– You can substitute the beef for chicken if preferred, though the cooking time may be slightly shorter.
