Meatballs with Lemon Creamy Herb Sauce

Ingredients:

For the Chicken Meatballs:

1 lb ground chicken

3 cloves garlic, minced

1 large egg

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil (for cooking)

For the Lemon Creamy Herb Sauce:

2 tbsp butter

2 cloves garlic, minced

1 cup heavy cream

2 tbsp lemon juice (freshly squeezed)

1 tsp dried oregano

1 tsp dried thyme

Salt and pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Instructions:

Prepare the Meatballs:
In a large bowl, combine ground chicken, minced garlic, egg, breadcrumbs, Parmesan cheese, chopped parsley, salt, and pepper. Mix until just combined.

Form the Meatballs:
Shape the mixture into meatballs, about 1-1.5 inches in diameter.

Cook the Meatballs:
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until golden brown and cooked through. Remove from the skillet and set aside.

Make the Lemon Creamy Herb Sauce:
In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Cream and Seasoning:
Pour in the heavy cream, stirring to combine. Add lemon juice, oregano, thyme, salt, and pepper. Let it simmer for about 3-5 minutes until the sauce thickens slightly.

Combine Meatballs and Sauce:
Return the cooked meatballs to the skillet, gently tossing them in the creamy herb sauce until well coated.

Serve:
