Ingredients:
8 oz rotini pasta (or any short pasta)
1 lb Italian sausage, sliced
1 tbsp olive oil
1 cup mushrooms, sliced
3 cloves garlic, minced
2 cups fresh spinach
1/2 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rotini until al dente according to package instructions. Drain and set aside.
2. Brown the Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced Italian sausage and cook until browned, about 6-8 minutes. Remove from skillet and set aside.
3. Sauté Veggies: In the same skillet, add sliced mushrooms and minced garlic. Sauté for 3-4 minutes until the mushrooms are golden and the garlic is fragrant. Add fresh spinach and cook until wilted, about 2 minutes.
4. Create the Creamy Sauce: Pour in the chicken broth and heavy cream. Stir to combine and bring to a simmer, allowing the sauce to thicken slightly, about 3-4 minutes. Stir in the Parmesan cheese until melted and creamy.
5. Mix & Serve: Add the cooked pasta and sausage back into the skillet, tossing everything together in the sauce. Season with salt and pepper to taste. Garnish with freshly chopped parsley and serve hot.
