Creamy Parmesan Chicken with Penne

Ingredients

1 lb penne pasta
2 large chicken breasts, cubed
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper, to taste
1 cup heavy cream
½ cup chicken broth
1 cup grated Parmesan cheese
2 cloves garlic, minced
2 tbsp tomato paste
Fresh parsley, chopped for garnish

Directions

Cook the penne according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Season the cubed chicken with garlic powder, onion powder, paprika, salt, and pepper. Cook the chicken for 6-8 minutes until browned and fully cooked. Remove from the skillet and set aside.
In the same skillet, add the minced garlic and tomato paste. Sauté for 1 minute until fragrant.
Pour in the heavy cream and chicken broth, and bring to a simmer. Stir in the Parmesan cheese until the sauce is smooth and creamy.
Return the cooked chicken to the skillet and toss to coat in the sauce. Add the cooked penne and stir to combine. Let simmer for 2-3 minutes to let the flavors meld together.
Garnish with fresh parsley and serve hot.
