Strawberry Birthday Cake Roll

Ingredients:

– 4 eggs
– 3/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1/4 cup powdered sugar
– 1 cup whipped cream
– 1 cup sliced strawberries
Instructions:
1. Preheat oven to 375°F (190°C) and line a 10×15-inch jelly roll pan with parchment paper.
2. In a large bowl, beat eggs, granulated sugar, and vanilla extract until light and fluffy.
3. In a separate bowl, sift together flour, baking powder, and salt. Gently fold into the egg mixture until well combined.
4. Pour batter into the prepared pan and spread evenly. Bake for 10-12 minutes or until the cake springs back when touched.
5. While the cake is still warm, sprinkle powdered sugar on top and invert onto a clean kitchen towel. Carefully roll the cake with the towel from short end to short end and let cool completely.
6. Unroll the cake and spread whipped cream over the surface. Top with sliced strawberries.
7. Roll the cake back up without the towel. Chill in the refrigerator for at least 1 hour before serving.
