Honey Garlic Sauce

1/3 cup honey

1 tbsp garlic, minced

1/2 cup low sodium soy sauce (see note)

1 tsp dried oregano

Crockpot Chicken and Vegetables

2 pounds bone-in, skin-on chicken thighs

1 pound baby red potatoes

1 pound carrots, peeled

1 cup onions, chopped

1 pound green beans, trimmed

Fresh parsley, chopped (optional)

Salt and pepper to taste

Cornstarch Slurry (Optional)

2 tsp cornstarch

3 tsp water

Instructions:

1. In a small bowl, whisk together honey, garlic, soy sauce, oregano, and ketchup to create the delicious honey garlic sauce.

2. Add chicken thighs, potatoes, carrots, and onions to your 4-6 quart slow cooker.

3. Pour the honey garlic sauce evenly over the chicken and vegetables.

4. Cover the slow cooker, seal the lid, and cook on LOW for 6-8 hours or HIGH for 3-3.5 hours (see note).

5. About 20 minutes before serving, add the green beans and the optional cornstarch slurry to the sauce for a thicker consistency.

6. Re-seal the lid and cook for an additional 15-20 minutes until the green beans are tender and the sauce begins to thicken.
