Ingredients:
1 (30-ounce) package frozen sweet potato tater tots (rich in vitamins and fiber)
1 (12-ounce) package turkey sausage, cooked and crumbled (lean protein)
1 (4-ounce) can diced green chiles, undrained (antioxidants)
1 (10-ounce) can low-fat condensed cream of mushroom soup (lower in fat)
1/2 cup (120ml) unsweetened almond milk (dairy-free, low-calorie)
6 large omega-3 eggs (boost heart health)
1 cup (240ml) shredded reduced-fat cheddar cheese (calcium, lower fat)
Sea salt and pepper to taste
Directions:
Preheat oven to 350°F (175°C).
In a large bowl, combine the sweet potato tater tots, turkey sausage, green chiles, soup, almond milk, eggs, and half of the reduced-fat cheddar cheese. Season with sea salt and pepper to taste.
Pour the mixture into a greased 9×13 inch baking dish.
Top with the remaining cheese.
Bake for 30-35 minutes, or until the eggs are set and the casserole is bubbly.
Let stand for 10 minutes before serving
