Ingredients:
– 1 sheet puff pastry
– 7 ounces baby spinach
– 2 garlic cloves, minced
– 1 tablespoon olive oil
– 8 ounces cream cheese
– 1/2 cup shredded mozzarella cheese
– 1 egg
– 1 egg yolk
– Salt and pepper to taste

Instructions:
1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
2. In a pan over medium heat, sauté minced garlic in olive oil until soft, about 2 minutes.
3. Add baby spinach to the pan, season with salt and pepper, and sauté until wilted. Remove from heat and let it cool down.
4. Cut the puff pastry sheet into either 6 large squares or 12 small squares, depending on your preference, and arrange them on the prepared baking tray.
5. In a mixing bowl, combine the cooled spinach mixture with cream cheese, shredded mozzarella cheese, one egg, salt, and pepper. Mix until well combined.
6. Spoon the spinach and cheese mixture evenly onto each puff pastry square.
7. Fold two opposite edges of each square over the filling, pressing firmly to seal.
8. Brush the tops of the spinach puffs with egg yolk for a golden finish.
9. Bake in the preheated oven for 25 to 35 minutes or until the puffs are golden brown and puffed up.
