Pumpkin French Toast

Ingredients:

1 cup pumpkin puree
1 cup milk
3 large eggs
1 tablespoon brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
8 slices of thick bread (like brioche or challah)
Butter, for frying
Directions:

1️⃣ Prepare the Batter:

In a large mixing bowl, whisk together the pumpkin puree, milk, eggs, brown sugar, vanilla extract, cinnamon, nutmeg, and ginger until smooth and well combined.
2️⃣ Soak the Bread:

Heat a skillet or griddle over medium heat and add a little butter to melt.
Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side. Let any excess batter drip off.
3️⃣ Cook the French Toast:

Place the soaked bread slices onto the hot skillet or griddle.
Cook for 2-3 minutes on each side, or until golden brown and cooked through.
Repeat with remaining slices, adding more butter as needed.
4️⃣ Serve:
